Vegetarian Noodle Salad

Here is how to cook this easy dish.

Here’s what you’ll need:

Dried somen noodles, carrots, radish, lotus root, dried seaweed and a basil leaf.

First you boil the water and cook the somen noodles for 2-3 minutes, rinse with cold water and drain well.

Cook thinly sliced lotus root and shaped carrots/radish in boiling water with a little salt.  Drain and set aside.

Decorate the somen noodles with basil and cooked vegetables. Sprinkle thinly cut, dried seaweed over the top.

Now it’s ready to eat with any sauce or salad dressing of your choice.
