Vegetarian New Year Food

Thanks to the vegetarian cooking class I have been taking, I can now even cook the new year Osechi food the vegetarian way.

The carrot we use for the new year’s cerebration is not the regular orange color.  We get these red carrots from Kyoto that they sell at this season even in Tokyo.  For the new year’s food we cut vegetables into fancy shapes which have special meanings.

The Ozoni Soup is a soup with a rice cake in it.  Different districts in Japan have different characteristics when it comes to Ozoni soup.  Each family has its own tradition depending on where the ancestor is from.

The soup I made was made out of Konbu seaweed and dried mushroom base as always.

      Thank you, Deena. I forgot to garnish my soup with fresh Mitsuba leaf but the scent of zest of the Yuzu fruit was nice.
