Japanese Eggplant and Cherry Tomato Pizza

I bought these fresh, small sized Japanese eggplants so I decided to make a pizza with them.

You slice the eggplants and soak them in water.  Next, you brush the eggplants with a pesto sauce and olive oil.

Then place the sliced cherry tomatoes on the dough.  Bake at 180 degrees for about 17 minutes.

Now the juicy and tasty pizza is ready to enjoy.
